Herbed Tempeh with Macadamia Nuts

From the Lightlife Organic Wild Rice Tempeh package

Serves 3

  • 1 pkg tempeh---cut into 1/2-inch pieces
  • 1 1/2 oz macadamia nuts chopped
  • 2 tsp fresh chives---minced
  • 1 tsp tarragon
  • 1/2 tsp salt
  • Cooking spray
  • Oil
  • 3 tbsp water

Preheat oven to 350 degrees.

Apply cooking spray to baking sheet. In separate pan, saute tempeh in small amount of oil for 3 minutes. Chop nuts in blender until finely ground. Mix nut meal with chives, tarragon, salt, and water. Dip tempeh in mixture and place on baking sheet. Place in oven for 15 minutes.

Serve with steamed green beans, a salad, and hearty slice of bread.

Notes: Haven't tried it yet. I don't use cooking spray---why does anyone use cooking spray? So I'll probably just lightly oil the baking sheet.
