Serves 2-3.
Preheat oven to 350 degrees.
Lightly oil a 2 quart casserole dish.
Combine all ingredients in the casserole dish. Cover and bake for 35-40 minutes, until everything is heated through.
Notes: This is a first draft of an original recipe. It was tasty, and easy. In the future, there are a few things I'm going to try adding, like caraway seeds, potatoes, granny smith apples, white wine vinegar, and red bell peppers. Not all at once, mind you. If you haven't tried these new Tofurkey sausage products, you're really missing out. They are much better than Tofurkey. One package is 14oz. I'm sure I'll be cooking more with both the kielbasa and the Italian sausage in the future.
2005-12-23: 1/2 tablespoon of caraway seeds was about right. This time I tried adding 3 very small red potatoes, dice into 1/2-inch chunks. It tasted good, but I think the cooking time may need to be extended, or the potatoes boiled for a few minutes first, because they came out on the crunchy side.
2005-11-02: I tried the caraway seeds. 1 tablespoon was too much. 1/2 tablespoon will probably do it.
