Overloading the Machine
Roasted Garlic Aioli
- 1/2 cup soy milk
- 1 cup oil
- 1 tablespoon agave nectar
- 1/8 teaspoon dry mustard
- 1 tablespoon apple cider vinegar
- 1/2 tablespoon salt
- 1 head roasted garlic, peeled
In a food processor or blender, combine soy milk and roasted garlic cloves.
While the food processor is running, slowly drizzle in the oil. It will turn into something that looks like mayonnaise.
Scrape the mixture from the food processor into a bowl, and whisk in the rest of the ingredients.
Today, an endless, recombinant, and fundamentally social process generates
countless hours of creative product (another antique term?). To say that this
poses a threat to the record industry is simply comic. The record industry,
though it may not know it yet, has gone the way of the record. Instead, the
recombinant (the bootleg, the remix, the mash-up) has become the characteristic
pivot at the turn of our two centuries.
